I poured buttermilk over them last night, but 30 minutes or more will do.
Heated 1.5 inches of canola to 350 in an electric skillet
Seasoned AP flour with black pepper, Tony's, garlic and onion powders to taste...heavy on the pepper...add Tony's to replace salt.
Dredge the chops and fry until golden on both sides ( turning as needed) and the "simmering" stops. Drain on a wire rack.
If making gravy, drain all but 4 or so tablespoons of oil, leaving the sediment . Add an equal portion of the seasoned flour...whisk until brown. Add water until you like the consistency...whisk until smooth....taste for seasoning, but none should be needed if the flour was correctly seasoned. Serve over rice or mashed potatoes.

The wife and I ate roast beef sandwiches, curly fries, and cheese sticks from Arbys. Despite all the hate this board gives arbys, we love it!

BLT (sorta) with fakin' bacon (tempeh), clover sprouts, roma tomatoes, and sriricha mayo. Mashed red potatoes on the side.
