Rouses had legs and thighs for $.88 so I smothered down some chicken and had rice, gravy, corn, cheesy potatoes, rolls and slaw. Fed my bartender. :)

Catfish Courtbouillon
About two weeks ago I bought 15 lbs of fresh catfish. I Foodsaver'd a few big filets just for making Catfish Courtbouillon.
Today was the day!
Started off with making a roux. This was some of a few cups of dry roux I made in the oven a few weeks ago. I just added a stick of butter for the fat needed.

Seasonings added to cook down a bit.

Everything but the catfish in the pot to simmer a bit.

Earlier after chopping the veggies I threw a lil batch of homemade rolls together.
Ready for the oven.

Right out of the oven and someone couldn't wait for them to cool a little.

Time to eat!


Pretty darn good!
