I had some odds and ends that needed using up, including rotisserie chicken and two kinds of mushrooms. Enough to make a small, quick pot of soup.

I sautéed the mushrooms in butter. Finely diced onion and chunky garlic also sautéed. Coarse salt and black pepper added after sauteeing, along with some dried thyme and 2 to 3 cups of stock made with Better than Bouillon mushroom base. Brought it to a simmer, lowered. Added a few big splashes of heavy cream and some softened Philly. Stirred until Philly was fully incorporated. Light simmer. Hot sauce of choice and some Tony’s. Finished with squirts of lemon juice. Croutons made with LC bread.

Earlier this afternoon before going to mass I whipped up a ricotta cheese manicotti with marinara sauce and Italian sausage. Grabbed a loaf of Italian twist bread from Dorignac's and the wife threw a salad together.

Had a leftover grilled NY Strip steak from last night, sliced it really thin, warmed it in a skillet w/pat of butter, put it on some toasted bread, melted a ‘lil grated cheese blend, sure was good!

Finished up the hummus, tzatziki and baba ganoush I made earlier in the week with some pita for a starter, then has some meat pies and boudin balls I picked up at Billy's in Krotz Springs earlier today.
