Late start - Will be smothered pork chops, braised collard greens, smothered okra, and potatoes however I decide to cook them. Maybe just smashed and fried.

Had some leftover Boston Butt from rice and gravy last weekend.

Cut it up in little medallions and seared on a grill (cast iron) hot and fast for maybe 3 minutes total.

Blows my mind that there is a cut that you can cook for 12 hours or 3 minutes and both are perfect. Add in making sausage, jambalaya and other things and I would say BB is the most versatile cut of protein.
