Stopped by Burris Farmers Market in Loxley. Sand Mountain tomatoes and Okra caught my eye.
Roasted some corn.
Smothered okra and tomatoes with smoked sausage, crawfish and corn maque choux, and roasted sweet potatoes. Crawfish came from my Dad’s pond.

That's looks great. I wonder how many people in your current location have ever experienced a good corn maque choux and smothered okra like that. Sad for them who haven't.

I did grow up in Southern Vermilion Parish and those crawfish are from Meaux. So I would say None except for the people from Kaplan making me shrimp and crab stew Tomorrow with the crabs I caught for them.

I had grandparents in the Abbeville area, and I remember those exact dishes very well.
Very nice. That's a win-win for all.
ETA for the OP: we oven-baked some stuffed catfish filets from a local grocery store, with oven-roasted asparagus and bow-tie pasta with a homemade pesto sauce.

Those are dishes that i wasn’t taught to cook but I saw cooked every Sunday by my great grandparents and my grandma. Saved them in the memory bank and shared with my wife tonight. She loves me for food, not looks!
