Salmon, salad, and lemon blueberry cake

Lemon, Blueberry, and Almond Pound Cake
Ingredients:
2 Lemons, zested
1 cup sugar
1/2 cup Extra Virgin Olive oil
1 Teaspoon vanilla
2 eggs
1/2 cup plain Greek Yogurt
3 Tablespoons Lemon Juice
2 Teaspoons Baking Powder
1/2 teaspoon salt
1 1/2 cups AP flour or cake flour
1 1/2 cup Blueberries
2 Tablespoons sugar
1/4 cup sliced almonds
Directions:
Zest 2 lemons into 1 cup of sugar. Mix until the zest is well coated with sugar.
Add half a cup of olive oil and 1 teaspoon vanilla. Mix well.
Add two eggs, one at a time, mixing the first egg in well before adding the second and mixing it in well.
Add half a cup of plain Greek yogurt and 3 Tablespoons Lemon Juice. Mix well.
Add 2 teaspoons baking powder and a half teaspoon of salt. Mix well.
Add one and a half cups of AP or Cake flour, mix until just incorporated, then stir in 1 cup blueberries. Mix well by hand.
Pour the batter into a parchment lined loaf pan.
Add a half cup of blueberries on top of batter then 2 Tablespoons sliced almonds and 2 Tablespoons sugar.
Bake at 350 degrees for 1 hour, Cool for 20 minutes before removing from pan.

Got a Freschetta pizza... Canadian Bacon and pineapple added some Bacon Jam, Colby Jack cheese and some Honey Ham... Garlic powder and Red Pepper Flakes... It was damn good. Not as sweet as you think.

If you like almond, I would add 1/8 - 1/4 teaspoon of almond extract. That stuff is very good if you like almond taste.

Actually, if you don't burn it, it has a pleasant cat like taste, with just a hint if cat spit, so we don't mind if a little gets in the gravy or dinner rolls.

Friend,
Your delightful dish reminds me to pray for our dear friend Salmon, whose house was destroyed earlier this month in those storms. Although it appears he is doing well, it is always a good time to pray for our friends, not to mention our enemies, just as our Lord taught.
We are at a cousin's house in Florida right now. I begged Mother to bring us to Charlotte today for the Christopher Radko warehouse sale. This annual sale has been on a three year hiatus due to the virus that took a swipe at you. She refused, and no one on the OT has of yet taken up the mantle and gone to the warehouse to take pictures for the benefit and edification of all of us. Let us pray that tomorrow holds a gift.
Tonight, we had NY strip steaks, which is not my favorite cut of meat due to the fat. These were prime NY strips, so they were even fattier and our cousin put butter on top. It was good if you enjoy steak coated in butter and salt, which I do not. Give it to me as it as a slab of beef. We also had fresh heirloom tomatoes, which we brought as a house warming gift. Yes, they are from Grandfather's garden. We also had some of their zucchini and squash which came from a nearby farm. The family prepared some succotash, which left much to be desired.
Touching to me was that this cousin set out the Fiestaware I gave her for Christmas in 2008. It is quite fetching, isn't it?
For dessert, we had an absolutely delicious key lime pie from Sam's Club. In my opinion, it is a better pie than that served at Joe's or even Kermit's. It is perfect, so good I went back for three slices.

I LOVE almond extract and I keep extra creamy canned whipped cream on hand as a staple.
