Today we took some smothered cabbage from the freezer for dinner.

To go with that I was going to make a pan of cornbread but went with corn sticks instead.

I have a couple of cast iron corn pans but I hate cleaning them. I remembered I have a couple of silicone molds and went with those.

I discovered a lil rice and gravy in the fridge and added that to my plate.

Love me some good smothered cabbage!!!

The corn sticks were slathered with melted butter!

May have a couple of those with some cane syrup on them in the morning. Mmmmm............!!!

Pork tenderloin and baked potatoes

Today I learned why you poke holes in the potatoes when one exploded in my oven.

I peeled some leftover boiled crawfish and collected a good amount of fat in the process. Once I decided to have the crawfish in a salad, I thought of adding the crawfish fat to some mayo, to which I added a little olive oil, lemon juice and a little Tony’s for a crawfish aioli. Dressed the salad with that after the pic. I can’t believe I never thought of it before.

Crawfish salad with bacon, cherry tomatoes, red onion, and crawfish aioli.

My phone is six months old and im still having a hard time getting the lighting right.

Ouch! You know, I almost always puncture them, but now I think it will be always! Did it make a noise, too?

No noise but I learned all about the easy clean cycle on my oven.

I almost always do also which will now be always.
