Looks good but i would cut the veggie a little finer and cook the gumbo a bit more. I I’d also cook down the sausage prior to the roux.

Agreed on this too. I misread the directions and cut the chicken into bite sized pieces before adding the first time. I was hesitant to cook it down too much and overcook the chicken.

I went back and forth on this. Since I fried the chicken, I wasn't too keen on adding more steps since it was already enough to do for my first time. I plan to do this as well next time.
Additionally, I didn't want a sludge gumbo like Liz's

Had 4 each of olde salt, rappahannock, blue point, and one other I can’t remember ($1 at Whole Foods on Friday) with homemade mignonette, then shrimp tacos with smashed avocado.

Do you add the breasts whole to the gumbo then remove and chop after simmering?

No cubed, always. Try to brown all sides. All proteins bite sized.
