Wagyu ribeye from.........Wal-Mart?....

Surprised to see them there, definitely not A1 wagyu grade and probably a cross between wagyu and an American breed, but for $20/ pound I will give it a try

A5 is the best grade, so this is most likely either A1 or A2

I, too, have no liking for Wagyu. Its corpulent speckling disgusts me. Its current place of favor in the American dining scene is completely an unwarranted fad. I’m disappointed in a fine purveyor of groceries like Walmart joining this trend.

Having said that A1 is the lowest, not highest, grade of Wagyu, which corresponds to a beef marbling score if 1. The highest grade is 5 which corresponds to a bms if 8 to 12.

You're thinking A5, but for $16 that's a great looking steak whether it's wagyu or not. Marbling does look like it though. It's undoubtedly a cross, likely with Angus.

Oops, I had the scale reversed in my head, so yes I agree it probably is a 1or 2

For comparison, these are wagyu from HEB Central market. Definitely not A5, but you can see the marbling is the same as yours. Only difference is you paid 1/2 the per pound cost as I did.

My butcher carries this Texas wagyu and this ribeye was like $28.

That is a good looking steak. Is that .59 lbs or .69 lbs ?

The items in that section of the meat coolers at walmart, with the wagyu stuff and grass fed beef etc, gets marked down a lot at my local walmart. I bought a bunch of packs of the grass fed beef that was marked down lower than their cheap stuff, and the meat wasn't old at all.

I usually get the grass-fed ribeyes from the same section. I love those. One time they were out and I got the wagyu. It was great for the price.

I was shocked too. I got some and did them sous vide then hard sear in cast iron...they were solid.

What temp did you set your sous vide? And how long?

I've been using 121 degrees for 90 minutes.

Could practically leave it on a plate in the direct sun!

Normally about 10 degrees higher for me
