I would definitely agree with you on a couple of the other comps however, ( this is going to come off as dick-ish but) straining ricotta, mixing it with a few ingredients, filling premade cannoli shells, drizzling melted chocolate and dusting powdered sugar all over it is hardly upper level technique (no offense Got Blaze).

It's interesting that some folks commented they don't have a sweet tooth. I am the same, although when I was a kid I would gobble it up. Many people would eat an entire cake or pie if it was in their house, but it would probably grow mold before I got to it. I'll have some dessert now and then, but I never crave it or cook it myself.

There are definitely sweet things I like, but I’ll hit appetizers, a main meal, fill up and easily skip desert. Then plow through a bag of chips after a bunch of bourbon later that night
