Vinegar connoisseurs comment... (hot peppers related)

I’m a big fan of making and bottling my own hot sauces but I’m far from a professional. The site I look at lots of recipes recommends using quality vinegars. Is there a difference in quality in basic white vinegars? I understand balsamic but was wondering about more basic vinegars.

Also difference in other vinegars buying a quality product and a store brand. Differences in flavor

I always wanted to make a hot sauce for fried foods using malt vinegar because it goes so good with fried foods, but never took the time.

I use plain old white vinegar for my hot sauces and they come out good. I’ve used apple cider as well. I didn’t know they had different quality plain white vinegar

Disappointing that someone named “VinegarStrokes” doesn’t have some hot recs. I’m curious about this too. I use several different balsamics that I know are a cut above, but I’ve wondered also if there’s much difference in all the brands of thin vinegars. I usually just pick something off the shelf I’m familiar with or that looks appealing.

I wouldn't imagine that they have different qualities of Acetic acid. Maybe fermenting it slower rather than faster gives off a slightly different flavor, idk

I use mostly plain white vinegar and sometimes apple cider vinegar for my hot sauces.

I also like to take white vinegar, add salt to taste and chop up some very hot peppers like habanero or Butch T's and put them in the vinegar to make a hot vinegar I use on beans and for salads when I want to kick them up a notch or three.

I like Apple Cider for my hot sauces. It seems a little less sharp if that makes sense.

My peppers have been for shite this year, so I'll have to end up buying some. My favorite pepper combo came off an episode of Bizarre Foods when he went to Jamaica. They briefly detailed a vinegar based sauce there. Stick of cinnamon, whole allspice, shallots, etc, etc. It's my go to sauce for everything now. I've been using cayennes for it, but they used scotch bonnets.

Cayennes and Tabasco peppers have been my favorites for sauces so far. Jalapenos have a vegetal flavor that I don't care for. I'm surprised that someone hasn't come out with a line of flavored, vinegar pepper sauces. My Jamaican one is legit. Other experiments not so much.

I prefer cider vinegar for my sauces as well. It has a sort of twang that I find goes really well with peppers. I usually buy a gallon of the store brand and it's just fine. White wine vinegar is my runner up.
