Turkey question for Christmas

Hey guys

Smoking a turkey for Christmas lunch and we are going to my wife's parents and not getting back until later in the day Christmas Eve.

I was wondering if it would be ok to smoke the turkey Thursday and wrap it up in the fridge and just reheat Sunday morning?

Anyone ever do this?

I would spatchcock the Turkey and smoke it that way. It will reduce the time it takes to get it done and cook it more evenly than whole.

I think it is somewher between 11-13 min per lb if you spatchcock it so a 15lb turkey would take around 3 hours cooked at about 250F. So you could put it on Xmas morning and it would be done by lunch.

Why? No need to smoke low and slow. I do it every Thanksgiving and Christmas for the last ten years. Get a 10-12 pound bird or two, smoke it at 325 and it only take about 3 hours at most. Wrap in foil, stick in an ice chest and go. No need to get up early

You can go up to 425 and be fine with a spatchcocked bird.

They do fine with high heat.

Yes, but take it off the smoker when the internal temperature is around 155, so when you re-heat, it won't be dry.

Kosmo advice is good too. Spatchcock and cook at 425-450 is the best way. I did this with a 12lb last weekend for a test run and was the best I've had. Cook time was under 2 hours.

If it's perfectly cooked on Thursday, it'll likely be dry after reheating on Sunday.
