Friend,

This list is incomplete without sopapillas from Panchos, Metairie location. Raising the flag after gorging on a diarrhea-inducing Mexican buffet was always a treat for me as a kid. Smothering the fried sweet dough in honey really helped me understand later in life just how terrible my parents were when it came to diet and nutrition.

Excellent suggestion. Dos Amigos on Williams gets it close, but their sopapillas do not approach Pancho’s. I had a standard at Pancho’s: 3 flautas, 12 tamales, 6 sour cream enchiladas, and 6 chili rellenos, hold the cheese sauce. I would get that in three separate orders, split evenly for each course: 1, 4, 2, and 2, respectively. I would either eat one sopapilla between courses for a total of three or just have one after all courses were complete. I used one of two techniques to get honey into the hot fried flour pocket. First, I would poke the belly of the sopapilla with a fork and the belly would either flake off or collapse giving access to that golden cavern. The sopapillas at Dos Amigos are triangular and their walls are too rigid to use this technique. The second method for honey infusion was biting off an edge and forcing the viscous flow to half capacity.

It was only on trips out to Metairie with Cousin that I had the opportunity to eat at this lost favorite. For those times in Pancho’s I will always be in debt to him.

The fried catfish, greens and flipped cornbread from Cock of the Walk - Baton Rouge (when it was good in the beginning)

The cole slaw at Cock of the Walk was great, too. I also liked their fried oysters.
