Had an arugula salad the other day that was tossed in a truffle oil dressing. It was awesome. Do any of y’all have a particular brand you like? I want to do some pasta dishes and salads with it.

Can't speak to brands of oil but, based on your post, thought it worth mentioning there are options for truffle salt. Nice little hint of truffle to finish/season your eggs, potatoes, etc.

I’ve been using this dry product to finish dishes. On Christmas eve I used it on potato wedges baked in duck fat!

This is the stuff I got off of amazon and it is potent. It is a game changer on eggs. It completely changes the flavor profile. I haven’t tried it on popcorn. It is good on potatoes, both mashed and fried.

I will say that the flavor is very rich. I love it but I don’t want too much of it, if that makes sense.

That’s approaching holy grail stuff right there. I was in northern Italy in September and had several dishes with white truffles. They are amazing and so different from black truffles. They enhance everything instead of overpowering it.

So if someone wanted to add truffle to a steak, potatoes, pasta, lobster, etc... should they buy truffle oil, truffle butter, or truffle salt?

Almost all truffle oil found in stores contains no truffles.

Is made from a synthetic flavor compound. Good old 2,4-dithiapentane.

The Truth About Truffles: Eataly

Wikipedia says the same and adds:

quote:

Truffle oil has a mixed reception among chefs and food critics. In a New York Times opinion piece, chef Daniel Patterson wrote, "[truffle oil's] one-dimensional flavor is also changing common understanding of how a truffle should taste." Anthony Bourdain said, "Let it be stated here, unto forever and eternity, truffle oil is not food." He is also known for describing it as the "tomato ketchup of the middle class". Celebrity chef Martha Stewart expressed her dislike of truffle oil in a 2014 post on Reddit, stating "I think truffle oil is one of the few ingredients that doesn't belong in anyone's kitchen. It's ruinous of most recipes." Restaurateur Joe Bastianich said, "It's made by perfumists. It's garbage olive oil with perfume added to it, and it's very difficult to digest. It's bad for you. It's bad for New Yorkers. It's bad for the American people. So, stop it."

Visited Tuscany, specifically San Gimignano last year and many of the dishes had fresh shaved truffles, which resulted in an explosion of deliciousness. Most of the markets lining the streets were selling truffles out of baskets! Pretty incredible experience. My regret was not doing a truffle tour to learn the differences and be able to discern what’s quality and what’s not.

If you liked truffles in Tuscany visiti Alba in Piedmonte for the white truffle festival and harvest late in the fall one year. It's amazing and those are the truffles that auction for $$$$$$$$$$.

It's great on salads.. I also like to boil little red potatoes, then pan fry them til brown.. Then add salt and pepper, truffle oil and chopped parsley.
But don't go overboard on the truffle oil. Less is more.

This.

We were there for the first weekend of the Truffle Festival in Alba and it was incredible. Unfortunately it is illegal to bring white truffles into the US in your luggage, so we just ate a ton of them while we were there.

That reminds me - I really need to finish that trip review.
