Just saw this on the Food Network.

Guy simmers pureed parsley in water and skims the chlorophyll off the surface. That gets mixed into the pasta sheets.

3 hour sauce with beef, onions, carrots pork and fine Italian wine. Bechamel sauce and Parmigiano-Reggiano cheese.

Anybody ever ordered this?

Yep along with the roasted pork pizza and the squid ink pasta with crabmeat.

I'll put some dishes at Sal & Judy's up against anything at Domenica. Chef Sal is a wizard in the kitchen.

Not sure if it's the best overall restaurant in the state -- that's a stretch -- but it'd be my choice as best Italian in the state.

That's about how I cook it. I learned it in a cooking class in Gaiole in Chianti. A bolognese sauce with bechamel sauce. Mine uses pork and veal. It only has three tomatoes in it and a lot of Chianti Classico. It takes about four hours to make the bolognese and it's a fantastic lasagne sauce.

He always says that when this topic comes up. I try to resist responding but it's like a woman walking the opposite way without a bra on, I can't resist looking.

when you factor in the atmosphere, service and value to the incredible food, I think calling sal and judys the best in the state is warranted. if isnt the best it's as good as any other
