Tomato pie

I made this tomato pie yesterday and it was incredible so I thought I'd share. This makes enough for two pies.
4 fresh red tomatoes (I used heirloom)
1 handful of basil leaves
8 slices of bacon
1 cup Cheddar cheese
1 cup Mozzarella
1 cup mayo
2 deep dish pie crusts
Slice the tomatoes and place on paper towels to drain while you prep the other ingredients. Hit them with salt and pepper.
Cook the bacon on a cookie sheet in the oven at 400 for 15 minutes or until crispy.
In a large bowl, combine the mayo with the shredded cheese. I think it's worth it to shred your own cheese because the pre-shredded stuff has cornstarch in it and that affects texture.
Layer the tomatoes in the pie crusts. Top with crumbled bacon and chopped basil. Spread the cheese mixture over the top and bake at 350 for 20-30 minutes until golden brown.
Enjoy.

I've made that pie for years and made a couple last week. Very good. My advise is slice tomatos and salt them on a rack and let them sit for several hours. Then pat dry with paper towels. The longer you let them sit the more water comes out. I also bake the pie shell for about ten minutes before adding the ingredients. Both of these things keep it from getting soggy. It's a great way to use up tomatos which I'm picking at a rate of a dozen a day.
