My best jerky is when I cut up an eye of round and get about 50 medalions of meat off of it. Then I take it and put it in a stainless steel bowl and season it with Cumin, paprika, chili powder, garlic powder, pepper, Slap ya' Mamma, Worcestershire sauce, soy sauce and a bit of liquid Smoke.
I let this marinate for at least 24 hours in the fridge and turn it often to make sure all parts are getting seasoned.
Then I put the meat on my dehydrator and monitor it until done. I like it a little flexible and not all dried out and put it aside to either store or eat.
The amount I make has me filling several quart bags with the finished product to store for later use. What I keep out to eat is kept in a fridge since I use no preservatives to keep it from going off without refrigeration.

There is a convenience store called Indian mound on the northeast side of central. It may be outside the city limits. Don’t go there as much as I should. Best jerky I’ve ever had.

I'm a jerky fanatic. I even make my own from time to time, but i find my favorite style of jerky is thin slab cut jerky that is dry and a little tough. Hard to find that nowadays. All there is now is that wet jerky stuff that i can't stand, or jack links, which is meh.
I liked bourgois' jerky in Addis, and Bergeron's in Lobdell. But after a while, all that smoke and spice wears on your tongue.

A lot of places sell smoked "jerky" that isn't fully dried out. It's good, but it's more like a slim jim than jerky. And the markup is high since they are selling you all that extra water.
I make my own and like it dry so eating it takes a while. I like to savor it.
