Thoughts on this gumbo video by Issac Toups
Toups Meatery guy making a C&G gumbo

Few points

1. He doesn't brown his sausage. Not horrible, but odd to me.

2. He adds beer between his trinity and his stock. Again, not horrible but odd.

3. At the end, he says, "leave it on the stove overnight". Always taught as a big no no to me.

Otherwise, seems like a pretty standard gumbo.

I do this for chicken/duck and sausage gumbo, but never for a seafood gumbo.

he is fun to watch, id watch more videos. But yeah seems basic to me and I brown my sausage like you suggested.

Isaac Toups is pretty awesome.

Also, gumbo really doesn't need to be anything other than standard and basic. Although I do like Donald Link's Fried Chicken Gumbo Recipe!

Making the roux with the chicken grease makes such a difference.

I sort of roughly follow this Donald Link recipe. You fry/brown the chicken in some oil and then use that oil to start making the roux.

The man can cook, couple weeks ago went to the meatery. Lunch was great just did not eat for a day after, ate to much for lunch.
