The old axiom “a chicken in every pot” has almost always been attributed to Huey P. Long by people from south Louisiana especially, but it’s roots in French cooking and culture apparently date back much further.

I always wondered why growing up, my mother always tended to cook chicken and potatoes and green beans in particular every Sunday, as did her mother. It was kind of a traditional Sunday meal growing up. Matter of fact, I knew lots of kids who grew up with similar Sunday meals, and although I knew it was kind of a French country dish, I never really gave it much thought until recently.

The tradition of "chicken in a pot" probably comes from having a flock primarily for egg laying. Meat was mostly spent layers that required stewing. The tradition of a Sunday feast goes back to when the Sabbath was celebrated.

Here's a great video recipe about that very subject. Poule au Pot. Very simple, short, and well shot. I like this channel's simple recipes and videography

Once that old hen was done laying she went in the pot. Hens are used for gumbos and stews because they can stand up to longer cooking times
