Cakes and I made some elote the other day and it was fantastic

Want to try and integrate the smoker next time.

The skips are definitely nice when you are pulling ears. That is Obsession II.

Corn freezes well? Do you have to process it in any way before bagging and freezing?

I think it freezes just fine. There are hoity toity people, like Gris Gris, that spurn frozen corn at all cost. Those of us not born with a silver spoon in our mouths do not share that opinion. Half of that was cut off the cob and vacuumed sealed. The other half was balanced for a couple minutes and froze in freezer bags. Some people around here swear by freezing it straight in the husk. I think that’s probably fine but I like to compact it some for freezer space/storage.

I freeze it in the husk. But most of the time we’re eating corn when we’re grilling meat, so I’ll just thaw it out and throw it on the grill in the husk, then shuck it and char it and my wife will do it up Mexican street corn style.

Just did this on some that had been frozen a year a couple weeks ago to clean out the freezer. Now we’re putting up this year’s corn.

Mr Balls, I'm honored that you recall my issues with frozen corn. I haven't had good luck with freezing it and have tried it several different ways. I must be doing something wrong as I would love to preserve that fresh picked corn flavor. I find the texture changes.

I have no issues with frozen peas and beans with the exception of frozen green beans. The ones in the store are awful and I haven't had good luck trying to freeze the fresh picked either, though I haven't tried as often with those as I have with the corn.

While I do own some silver spoons, I was not born with them in or out of my mouth. I acquired them.

Thank you for remembering me during corn season!
