Superior Grill Skirt Steak

One of the best skirt steaks I’ve ever eaten, aged 35 days. Anyone got a recipe?

Their farm raised salmon that no one on here will admit to eating is good as well. Has a good charcoal flavor.

I haven’t had that particular one, but I’d bet a dollar to a dime it’s got MSG in the seasoning. I fell in love with Tex Mex Skirt Steak years ago and set out to figure out how to replicate the best ones I’ve had. End of the day, it’s Kosher Salt, Fresh Cracked Pepper, Garlic, little bit of chili/cumin, a little MSG (Accent) and grill it hot and fast over mesquite.

Obviously buy upper Choice or Prime. Dry aging at home will be your challenge

The reason I get it the whole steak instead of fajitas is I know it’s cooked to order and I can say I want seared/almost rare... the fajitas are already cooked/sliced and then they just heat them up on your sizzling cast iron.

Used to be pretty good cut of meat and always came with rice/soup, tortillas, relish, etc. That was 10+ years ago. Now they serve you a low quality cut, the steak is nearly always cooked wrong, and you sometimes get all the sides. The price is also now 60% more than when it was done correctly. Superior lives off the cheap margaritas.

Likely soy. One of my old clients owned a Mexican restaurant and gave me their skirt steak marinade recipe. From memory, it's..

Reduced sodium soy sauce
Fresh lime juice
Dark beer(Negro Modelo preferrably)
Chili powder
cumin
Garlic powder
Mexican oregano
Sliced jalapenoes
chopped fresh cilantro

I forget the measurements though, and I never really measure when I make it. And they did sprinkle it with MSG before putting it on the grill, but I've always skipped that step.

Never had Superior Grill's though so can't say how it compares.

I assume you are talking about the Steak Tampiquena..that is my go to every time. Not sure what's in the marinade but its a good blend of salty and sweet.

I had this for the first time two weeks ago and was blown away! Will always be my go-to moving forward in lieu of their standard fajitas.

This one is good too when you swap out the chicken for steak.

Try the marinated skirt steak at The Shack in Covington. Excellent.

I know a Manager of one of the locations.

I became slightly obsessed with the steak tampaquenia.

I asked the Tampaquenia recipe. His reply:

1. Quality, aged meat
2. Mesquite grill

Marinade: teriyaki, honey, water.

Dress with butter after grilled.

I have tried to replicate this several times, and it’s damn close. Just don’t use too much honey.


FYI, they use teriyaki on the onions too.

Also, the “Fajitas Mesquite” on the lunch menu is the same thing, smaller portion, but half the price.
