Summer Time Tomatoe Pie

This recipe comes from an old poster FredSecunda

I made this tomato pie yesterday and it was incredible so I thought I'd share. This makes enough for two pies.

4 fresh red tomatoes (I used heirloom)
1 handful of basil leaves
8 slices of bacon
1 cup Cheddar cheese
1 cup Mozzarella
1 cup mayo
2 deep dish pie crusts

Slice the tomatoes and place on paper towels to drain while you prep the other ingredients. Hit them with salt and pepper.

Cook the bacon on a cookie sheet in the oven at 400 for 15 minutes or until crispy.

In a large bowl, combine the mayo with the shredded cheese. I think it's worth it to shred your own cheese because the pre-shredded stuff has cornstarch in it and that affects texture.

Layer the tomatoes in the pie crusts. Top with crumbled bacon and chopped basil. Spread the cheese mixture over the top and bake at 350 for 20-30 minutes until golden brown.

We love doing tomato tartes as an appetizer. It’s similar but in much smaller batches. I’ll find the recipe and add it here soon.

I made one earlier this summer with a pressed biscuit crust. It was delicious!

Mine follow the same recipe. Make several and freeze them when the tomatoes are making.

Ate the last one out of the freezer last week. Fingers crossed for a decent fall crop.

Wife makes one real similar but no bacon. Heavy on the basil. They’re great
