Stuffed peppers from Saturday

I wanted to bring something to a friends house for the game, and never made any kind of stuffed pepper before, so I did some googling and some improv and came up with this.

Largest jalapenos I could find, pork sausage, chorizo, cream cheese and parmesan.


I browned the sausage a bit then added half a tube of chorizo just to spice it up a bit. I then used a pork rub and some chili powder to taste.

Here is the mixture after blending in the two cheeses

After a while on an open top grill,


The taste was great, but I overcooked the peppers. I hate raw tasting peppers of any kind, so I did not want that. These got past the point of holding their own weight. Made more yesterday with some sweet peppers and they were even better.

When i think "stuffed peppers" I think if he Italian version (bell peppers, ground beef mixture, tomato sauce and cheese on top) but these look great.

These are almost like the "buffalo turds" or whatever they're called

Yea that's a lot of stuffing.

They look very good though. Stuffed peppers are one of my favorite foods for the grill

I was on the fence with bacon and decided not to use it. I may next time.

I really did not know what to call these. I went to the store expecting to find some larger pepper, but Kroger had very little that day, and these were the largest jalapenos I've ever seen.
