Specklebelly and duck ideas.

You have a speck and a few ducks. All plucked. How are you cooking them? Looking for new ideas.

Look in the Recipe Book above. There are several recipes for whole birds.

Rub olive oil on them and a few seasonings.

Light charcoal pit.

Put ducks and goose on pit wrapped in foil. Cook until 160.

Unwrap foil and throw birds away.

Eat the charcoal.

brown them in cast iron w/ onions

remove skins and cube

make duck gumbo with smoked andouille and sausage

Assuming there is no skin.

I typically make Jalapeño poppers or fry them.

Terrible take...duck is fricking delicious. If it's on a menu when I'm out, I'm ordering it.

Pot roasted, with some fruit: pears are ripe and nice right now...so are cherries.

I can cook great. I just don't like ducks.

There are plenty of meats much more delicious than a duck or goose. Hell, plenty of birds are better than those 2.

Duck/goose and greens is a Home run. Some good smoked sausage and braising the bird with the greens is crazy good.
