Sous Vide Steak Question

I put a strip in the bath at 118*. It got late and I wasn't hungry. I put it in the fridge in the bag. Can I throw it back in the bath tomorrow and then sear it, or should I throw it? Thanks.

How long in the bath?

I think it's fine safety wise.

Texture could be off if you sous vide too long.

118 seems pretty low but you should be able to put it back in for about 30 minutes just to get it to come back up to temp and then sear it

Wouldn't want to go a full 2 hours or anything

In the bath about an hour and a half. I think I will give it a shot. If it kills me I will let y'all know.

I would just sear it as is, no more sous vide

This. Don't just simply toss into the fridge as it will stay in the temperature danger zone longer. I usually sous vide more than I can eat at one time, so ice bathing stuff down then refrigerating or freezing is the norm.
