I'm the guy who refused to take the bread while I ran to grab my phone.
Just tried the loaf with apples and cinnamon. Toddler and I killed half of it and a half a stick of butter
It was great.
I gave your gift card to a friend. He and his gf equally enjoyed the sour dough.
For a guy who can cook almost anything, bread making beyond biscuits has always made little sense to me. Either I can't get the dough right, I over complicate it, under salt it, something always goes a bit wrong

I’m working on the apple sourdough so I’ll have it ready for fall. I think it needs more well…apple.
When adding inclusions the rule of thumb is do not add more than 20% total flour weight in order to still get a good oven spring and texture but that’s just not enough with the apple since it just tends to wash out so I’ll bump that up.
The miso, seeded came out nice tonight and I’ll have a dozen them tomorrow. Has just a touch of molasses with red fife and it’s got some really deep flavor.

Have you considered dehydrated apple sauce? We use it to make pancakes. It is amazing flavor... But obviously no real texture to be found.

I made my own applesauce and am testing a couple today for that bread. If it works out I’ll make a few for this weekend.
I used Cosmic Crisp and some Granny Smith and I’m just not a fan of the tartness of the Granny Smith so it’s a work in progress.
I remember your secretary. She bought some for herself. Tell her to come get more.
I’ll have a good miso seeded red fife this weekend along with a lot others. Been getting busy and I appreciate the Food Board support. I count 7 so far but I’d imagine one of two lurkers slipped in.
I’ll have a nice Khorasan ancient grain sandwich bread Saturday too. Man it has some flavor.
And some of the women have brow beat me into making the M&M bread for them this weekend. It’s a pretty great little enriched bread laced with M&M’s.
And the stone milled Bloody Butcher Corn English Muffins with white cheddar are really good. I’ll have those too. Come see me.

I am there Saturday from 9:00-5:00.
Have some good Khorasan ancient grain tin pan loaves just put into refrigeration for 36 hour cold proof.
I’ll have a big plain whole wheat bread, and a good miso, seeded red fife heritage grain bread.
And probably a cranberry oatmeal if I can get to it.
Hummus will be made tomorrow along with the smoked Gouda pimento cheese. Those sell fast.

Really nice light rye sandwich bread and a good Red Fife in addition to the usual suspects. All fresh milled.
Have a great Smoked Gouda Queso that is fire.
Come stock up Saturday for your opening game party.
Smoked Gouda pimento cheese and homemade hummus for spreading on the breads.

The sun dried tomato, pesto and Parmesan is fantastic as well as the smoked Gouda pimento. I haven’t gotten to the other stuff yet, but I’ll break it out for apps before game later.
I also got some egg rolls and pizza based on your recommendations. Those egg rolls are as good as it gets and can’t beat it for $2 per.
My son is hoarding the pizza so can’t report back on that.

I have the pimento cheeses every week along with the hummus and will have the smoked Gouda queso both a spicy and a mild too. May make one with some chorizo. See how that works.
The Gladys Kravitz light rye bread is really nice so I’ll keep it on the menu for a few more weeks. Pastrami on Gladys for lunch.
Had I think 5 food board (allegedly) regulars yesterday and I hope all had great bread.
My 100lbs of almonds hit the door yesterday so I’ll start on fresh almond butters today while I’m milling this weeks flour.
I sold 130 loaves yesterday and I think the bread speaks for itself and hearing your response kind of validates my hopes of what I set out to do. Create nutritious, handmade sourdough breads and let the public enjoy and decide if the bread is worthy.
I’m from Baton Rouge and I knew the product had to be good to sell because this town has some deep appreciation for quality food but won’t hand out loyalty blindly. If the bread doesn’t live up I’m not going to convince anyone. Taste earns its worth and anything less just won’t last.
So thanks again. Hope to see you next Saturday.

Have a few black chocolate, Bing dark cherry sourdough for tomorrow.
Also have a really unique English muffin. Khorasan ancient grain, Bloody Butcher heirloom corn, Smoked Gouda and Hatch peppers. Just had one toasted with butter and an over easy egg on it. Whew.

Where can i get a sourdough starter? I had dry yeast and misplaced it. I let my starter die. I wasn't to get back into bread. I started some wrapped flour outside to get natural yeast. But just in case that doesnt work...
