Wasn't the issue short supply of the peppers themselves, which affected all brands? Maybe the others were just easier to get because everyone uses that one brand and didn't want to try another?
Huy Fong fricked up his long-standing relationship with Underwood Ranch who supplied all the peppers. Fong decided to get all his peppers cheaper in Mexico. Turns out his bargain basement Mexican suppliers couldn't meet the demand they promised, that's what caused the shortage of Huy Fong Sriracha. The original ranch ended up suing him for millions for breach of contract, and was awarded the millions. That's the short version. You can Google more about it for additional details.
Underwood Ranch sells the original hot sauce made from the same exact peppers from the same exact land as the original. They also 100% ripped off his recipe because Fong never thought to trademark or copyright or patent anything. The closest you'll get to the original is the one from Underwood Ranch.

Amazon carries the siracha and the sambal. Sometimes their groceries can be more expensive than buying locally. I haven’t checked prices.

This one in your pic, by Huy Fong Foods with the rooster, is the best by far and the original. All of the knockoffs are not even close to the flavor of this one.
Easily. The one the poster above linked has way too much sugar. The OG has less than a gram

The tabasco version is superior.
No idea how.
But it just tastes better.
