Jeezus....serve gumbo, etuoffee, po-boys, fried seafood/ catfish platter, a grilled fish with some sauce....bienville, simple creole or ponchatrain maybe....that's cajun to most of the world.....oh...and pastalaya! Cajun is like any other local food type that spreads to other parts of the world, it gets simplified and changes to fit local palettes and ingredients....ya know....like how cajun food evolved from african/Caribbean and french and whatever else.

Baton Rouge cant even do this. One hour from nola, and they still cant figure out how to make a poboy. The "cajun food" in baton rouge is a joke. The closest ive come to louisiana food outside of the state is the cajun experience in Leesburg, VA

They opened up a "cajun" restaurant in Edmond, OK. I have never been and probably never will go there. The pictures I've seen look awful. They were advertising boiled crawfish at one time. So I wanted to know where they get them from, I called. They told me they get them frozen then boil them. I laughed and told them that was just wrong.
So sometimes a cajun restaurant in others parts are just not good ideas.

Not sure if this is cajun food or not. I threw in some potato salad after I took the pic. Not sure if that makes a difference.

Drive over to huntsville and eat at the po boy factory. It isn't outstanding, but isn't bad either.

I don't even wanna drive across the river , I used to go to tim's cajun kitchen in huntsville a lot when I lived there though.
