That recipe includes this snippet which I find to be 100% true. If you don't soak your beans you will get some crunchies in there

I like the ratio of 1 lb beans to 4 cups water. I also find that the texture is better if eaten the next day. Much creamier.

Definitely soak your beans overnight, but soak them in a brine. 3 tablespoons of salt to 4 quarts of water.
Got this tip from America's Test Kitchen. It makes the skins of the beans cook at the same rate as the insides. No more blown-out skins floating in your pot.
