Nice.

Although I would have never thought to cook chanterelles with basil.

Sage is my go-to with shrooms.

I made a basil cream reduction which also had shrimp. That was dumped over some fried eggplant wheels.

Should not put any herbs on chanterelles, just butter, salt, and pepper.

Don't mask that wonderful nutty flavor.

Lucky I have all you geniuses. I’m sure you would have hated this dish, which was inspired by a New Orleans chef. It was terrible. I picked enough mushrooms to cover a picnic table, and made about a gallon of duxelles for Wellington. But carry on with your anti- basil with mushrooms selves.
