Breaks down the cell structure and helps soften and tenderize dried beans especially if they are old.
Also for big beans like chic peas it help break down the skin so you can get rid of it and make creamier hummus.
Keeps the farts down in the family room after dinner.

On a side note Costco had the Instapot on sale for $60 today and I bought one just to see how it cooks beans. Several people that have them have told me you can cook beans in 1 hr without presoaking the beans and they taste the same as beans soaked overnight and cooked all day in crock pot.
I have my doubts but will report back.
