Snapper Sandy appetizer - with pics

I got invited to a wild game tasting party. The men were told to cook something using any fish or game you had. All I had was red snapper, and this idea popped into my head. It's based off of the Snapper Sandy from Tunks. I have never prepared an appetizer before.
The idea was to fill Phyllo shells with the sauce then top with cooked snapper. I was afraid to grill and have it stick and break apart, so I scored the filets and baked.
Sauce was 1 stick of butter, then 1/4 cup flour cooked until fully incorporated(very light color) then add 2 cups of 1/2 and 1/2. Later, I added 8 oz cheddar cheese and a decent amount of crab meat. I should have toasted the shells, but I was pushed on time.
I cooked the filets at 375 for 15 minutes. Filled the shells with the sauce, topped with chunks of snapper then returned to the oven for 5 minutes. Turned out great. Only thing I would do differently in the future is, toast the shells first, and make 1/2 of the sauce.

Looks good.
I'm with you on the shells. I love them, but I always crisp them up a bit in the oven before using them. They are supposed to be fully cooked, but they taste a little raw to me.

I’d consider cooking some scallions and a bit of garlic into the sauce. That does look good, though.

Oh, I did add garlic, and I was supposed to add green onion-I forgot.
