Smothered potatoes

Does anyone have a good recipe for this dish which seems to be a staple of Louisiana based caterers? Potatoes, bell peppers, and smoked sausage are the main ingredients, but I’m getting mixed information on how to cook it up. Any help would be appreciated.

My only advice is use a cast iron skillet.

brown the living piss out of the onions. I add just enough raw taters to cover the bottom of the pot with the sausage so you can really brown them. I cook down about half until they are disintegrating then I add the other half and let them cook for an hour or so. I like using 2 or 3 different colored peppers so the dish looks all nice and colorful. As john folse would say "we got some nice color in there"

When I do just potatos and onions I do them in the rice cooker.
Pam
1 small onion diced fine
6 medium potatoes, peeled and sliced 3/8" thick
3/4 stick of butter
Seasoning to taste
1/4 cup water
Spray rice cooker with pam, add a couple Pat's of butter, a sprinkle of onions, a layer of potatos, seasoning. Repeat layers till everything is used up. Add water, start rice cooker. About 12 minutes in give them a stir. Depending how smothered you want them you may have to go another round. But the 2nd round doesnt take near as long as the first

Use chicken in broth to boil the potatoes, not water.

I don’t use sausage
Put a layer of onions the then sliced potatoes with salt pepper and garlic along with pads of butter. I repeat this process Till the pot is full. Simmer on low till potatoes done. This was a hunting camp staple growing up its also damn good with some pancake syrup on top.

I put about 1/4 cup of oil/bacon grease in a heavy pot, use About 4 sliced russet potatoes and 1 sliced onion, cook down stirring frequently, add water or broth sparingly, season with Tony’s or equivalent, cook and lightly smash til done
