Chicken thighs are another great option. They are cheap, don't a lot of time cook, and can help you dial in the temps. I found a poultry rub at Academy that has been my go to for chicken. Pair that with some cherry wood and call it day. Best of luck.

If you're talking about getting it crispy, what I usually do is have the oven set to 350 and when my chicken is ready or a few degrees before that, I pull it off the smoker and put it in the oven for about 5 minutes and that will crisp the skin right up
You get all the smoker flavor with a crisp skin

My dad got me an oklahoma joe for a house warming gift. It's got 3 pods - 1 for gas, 1 for charcoal, and then the smoker is on the side

If it is the one I just google searched with the offset fire box, you should go check out Aaron Franklin's youtube channel for some tips. His videos are very helpful if you are cooking on an offset smoker.
