Smoked Boudin Omelet

I skipped my usual oatmeal for breakfast this morning and made myself a smoked boudin omelet with some Kartchner's boudin.



Yeah, there's shredded cheddar cheese in there!

Best use (besides eating cold) for leftover boudin, and probably the best way to eat crappy boudin (Looking at you Rouses).

I like to incorporate leftover boudon into my breakfast, I like too take it out of the casing and make a patty out of it. Heat them in a pan until they have a nice brown crust and then either put it on a egg and cheese biscuit or make a bigger patty and put a fried egg on top.

I do this too. A little tip: add a drizzle of honey on there as well.

Do this all the time, but prefer regular to smoked.

Specifically the packaged boudin. The fresh boudin from the meat counter is pretty good. The packaged stuff is all rice and a little meat.

I like to fry up a breaded boudin patty and throw it on a fresh biscuit with bacon, and topped with Steen’s.

The chimes has a great boudin omelet on their sunday brunch menu...

A few years back we ate at a restaurant just No. of Lafayette on the service rd. west of Hwy49. Can't remember the name but I think it had a shrimp boat in he parking lot??? Anyway it was for brunch they served an open face biscuit with a boudin patty on ea. side topped with two poached eggs topped with crawfish etouffee. All this and a Bloody Mary too.
One of the best meals I've ever had!!

I wish I could remember the name...but now it seems the sign outside it had a guy mustache and goatee with a crown on his head??

Same. I do a boudin benedict type deal.

Open face biscuit
Fried boudin patty
Slice of pepper jack (let it melt, might need to pop it into the oven)
Fried egg
Pepper jelly drizzle

Leftover boudin is awesome because you can stuff it into almost anything with pepper jack and then use pepper jelly as a glaze or dipping sauce.. and people think you're serving them something restaurant quality when it was stupid-simple. I love it.

Maybe but I swear it was on the just Off the NE Evangel hwy. because we went to the ALL WOODS furniture store from B.R. That's how we found it. Sure looks like the guy...
