I got home from getting my ashes and since it's Ash Wednesday I decided to have a grilled grilled cheese sandwich for lunch. Well, I spotted some French bread left from yesterday's roast beef poboys and went with that. I open the drawer in the fridge for cheese and ended up using five different cheeses for what was supposed to be a simple grilled cheese sandwich.
Provalone, Swiss, grated cheddar, Muenster and American.

Started out toasting the inside of the bread first with butter in a hot pan.

Both insides toasted I added the cheeses.

With more butter in the pan for goodness I started toasting the outer sides.

Done and ready to enjoy!

Here it is! Those innermost slices of cheese don't look melted but they were just a couple of degrees from oozing like the others.

Sinfully delicious is all I have left to say!!!!!

That looks mighty tasty, did you pair it with a good dipping soup?

About a year ago I made the switch to using mayo in lieu of butter for my grilled cheese sandwiches. Never going back.

I've been doing the same since I saw it mentioned on this board. I don't even know if I've noticed a difference taste wise but it's a hell of a lot easier to spread mayo on untoasted bread than butter, so I never went back

The mayo works well but it doesn't taste the same as with butter. The reason mayo works so well is that it isn't as thick or hard as the butter to smear. I melt butter in the pan or griddle and drop the bread on the melted butter. It gives a more even toasting of the bread.

This is the proper way to do it. Your grilled cheese game will improve by 10 points when you start doing this.
