Shredded Chicken Recipes

So i roasted a 4lb chicken to use for gumbo.. i didn't end up using it for the gumbo and now have about a lb of shredded chicken meat (it is pretty flavorless). I need a yummy recipe for shredded chicken

I usually use any left over shredded chicken in a stir fry....

Chicken Flautas
- Fry corn tortillas in oil briefly (10 - 20 seconds) so they are pliable. Set aside on paper towels to drain excess oil.
- Place chicken in the tortilla and roll it tight, spear with a toothpick or 2 to keep it closed
- Fry flauta on all sides until golden brown and crispy.
This goes well with fresh guacamole.

One thing to be careful of, the tortillas will be fragile and tear easy. I only fry one or two at a time for step 1 and use tongs to move them from the frying pan to paper towels.

I just had the same issue, made chicken and lime tortilla soup. Very light and tasty.

Cooking the chicken yourself is great but Rotiserie chicken is so good, not really expensive AND its already cooked. Triple win for you!

Chicken salad sandwiches
heat it in a pan with water/taco seasoning and make tacos/quesadillas, etc
