So you are willing to pay 5-10 people for an extra hour to hour and a half of work on the off chance some douchebag walks in five minutes to closing and wants to spend their 20 bucks.

For someone who worked in the biz you don't know dick about how expensive it is to run a restaurant. They are trying to save money where ever they can. One of those places is by cutting the kitchen staff and trying to get a jump on cleaning.

RUle of thumb is... don't show up to a restaurant if you can't finish your meal by closing with a ten minute grace period.

people are staying up later at night .. 10PM just really isn't late anymore .. events run until 9ish or later .. etc. .. yes, there is a huge market out there running the streets at that time of night ...

chill the frick out .. business is business and it is expensive to run ANY fricking business, not just the restaurant biz .. stop acting like it is some special industry sitting alone on this horrible under appreciated island ...

It seems that most people here are in agreement that it is NOT acceptable for people to come in after closing time. It seems though that most of the general public does not agree. The biggest problem with people coming after/around closing when they KNOW the hours is that their tip does not reflect how appreciative they say they are that the restaurant stayed open for them.

It puts restaurants in a weird place. If they say, sorry we around about to close, blah blah blah they are losing business not only from that night but people will bitch to their friends about it.

But everytime my boyfriend and I go out to eat we always ask AS SOON AS we walk in if it's after 8 PM what time they close. If we walk in at any time close to closing we leave. We aren't going to do that to the WHOLE staff. Plus, I like to enjoy a good, well cooked meal not a rush job.

If for some unforseen reason, say, after a movie or something, I get to restaurant within 20 minutes of closing, I'll talk to as many people as I can (host/hostess, server, manager) and make sure it's truly cool. If no one else is in the place I won't even do that and I'll go somewhere else (unless I know the place and its people).

that is very reasonable .. every once in awhile i may hit a place a half hour before closing and ask if it is cool that i order a quick burger to go .. you can always tell by the look in their eyes when they answer as to whether or not it is cool ... then i will act accordingly .. but i will always toss in an extra $5 on top of my tip if they courteously serve me ..

I think it's far too cost ineffective to purposefully keep employees in the kitchen to clean the last few stations.

As a business owner, this is far from always true. I have some great people who have been busting arse all day for me or some inconsiderate jerk I may never see again shows up at the last second, no contest. If it is a regular who is in a spot, I'll bend the rules as much as I can.

once again, i know it is a time honored practice in the restaurant biz .. and, like i said a number of times, i abide by that .. i just think the industry-wide perception by staff that the customer that walks in at 9:25PM when closing time is 10PM is satan sucks ... there is a difference between walking in at 9:59PM and 9:25PM .. yet both are pretty much viewed in the same light ..

That may be a little bit of a stretch. Problably depends upon the place.

i have seen it at a number of places, bro .. it has grown to the point where the last hour the place is open basically belongs to the kitchen ... just like the growth of the phenomenon of entitlement on the part of the wait staff -- hence the "8 rules you should not violate as a customer to piss off your precious wait person" thread ..

In large metropolitan areas this is true and most restaurants in those areas have taken that into consideration when POSTING their hours.

In the rest of America dinner service is a two seating affair not a three.

It is expensive to run any business, but their aren't many businesses where your inventory is slowly rotting and clearance items can kill people.

No they haven't. Americas have been conditioned to eat at around 6 or 8 o'clock. There aren't many people in a restaurant after 9pm. There is no reason to stay open. If the demand was there the restaurant would cater to a third seating. Many restaurants in downtown areas do this on the weekends. In Europe almost every restaurant does this because Europeans eat much later than their American counterparts. This is also why restaurants are often closed Sunday evening and Monday. People don't eat out on those days so it's a good time to give your staff a couple of days off.


Bully for you for not showing up late and ordering a 6 course meal. That's great. No kitchen staff wants to stay late. They've been standing in 140 degree heat for the past 6 hours at least. They've been rushing the whole night, and they've just now started to wind down. They can taste that first beer already. Can you blame them for being a little ticked off when a party of 6 shows up 10 minutes to close? They have to start all over and getting out in 30 minutes just turned into getting out in two hours and redoing a lot of work they've already done. They'll still cook your food though. That's their job. Don't come in after close though and expect to get served unless you're famous.

I think restaurants that offer a full menu until 10 and then a scaled back menu until 11:30 do it right. They allow the kitchen to start cleaning and can still serve to the late night stragglers.

i love how these threads always turn into the industry vs. the customer and the customer is always assumed to be an idiot and everyone working in the industry is just biding their time until their ivy league school application gets approved ..

Here's the deal. I think someone who is a pro and working their arse off at anywhere from Houstons's (at the low end) to Lilette or Stella! deserves respect and courtesy. Most of the people I know in the industry bust their arse and go out of their way to learn the craft, the food and the wine and they do a good job. I don't know much about Appleby's or Taco Bell.

What the hell is wrong with you? These threads always, and I mean always, turn into how you the customer should get your way every time and the menial workers in the back should get down on their knees and praise the good lord that you decided to grace them with your business.

Here's a newsflash, every business should get the right to tell someone to go to hell. They reserve the right to enforce their policies, such as closing times and when they want to sit someone. You are not special.

Also, No business owner has to let a customer treat any employee with disrespect, I never did. I kicked customers out for pulling some of the shite most on this board claim they should have a right to do because they are the customer. Never hurt me with regulars and even increased their view of me.

Try walking in two minutes before close, and I will probably tell you "Too late. Come back earlier next time." And you know what? Deal with it.

You want us to respect you, then start respecting us. We have rules we follow. You should follow those rules as well.

eta: You does not mean you personally, just people with viewpoints I was addressing.

no they don't .. i will assume since you work in the industry that you can read, so i won't mention the fact that i have made it clear i would never walk into a restaurant just before they close ... this thread wasn't about anyone disrespecting industry workers .. read it ...

without the customer "gracing" the presence of the restaurants, the workers in the back that YOU labeled as menial wouldn't get paid ... i know all too many times those of you in the industry forget that .. how much money would you make in an empty restaurant with no customers that closes on time like clockwork and everyone gets to go home at closing time on the button ?

in this economy, be happy for ANY fricking business you get ANYWHERE .. it is an attitude like yours that i am talking about .. the customer is doing YOU the favor by walking in and should revere and bow to you and thank you for taking time out of your uber-busy life to give them service for the $80 they will be paying for a family of four to eat hamburgers .. God knows they couldn't cook four hamburgers at home for about 1/10 that .. they are clearly the assholes for choosing to eat at your establishment instead of doing that and just getting in your way !!
