Nola was "owned" but most simply, administered, and there wasn’t much in the way of Spanish immigration.
Those that did immigrate came from mostly other colonial holdings like the Islenos from Canary Islands. And there on the Canary Islands, they lost their spanish cuisine and have more of a Caribbean cuisine.
Other immigrants were Cubans and brought their food.
That being said, as anglos began to dominate Louisiana after the Purchase, the Islenos and others stopped cooking their food as they assimilated. Whereas the Francophones had a much larger population and didn’t assimilate as quickly (although they eventually did)

No need to share that I like just walking in and eating. Some of the best meals I have ever had.

We may need to talk. My wife and I have been looking at Spain, Portugal, and Croatia.
The direction this country is heading in is horrific.
We have had multiple trips to Spain and love it. Basque country and Barcelona the most, but Seville is not far behind.
