I have never cooked that much at a time, more like only up to 5 lbs. or so gotten from the grocery store in their raw state.

I'll season my water just like I would with seafood boil seasoning for doing crawfish, shrimp or crabs, so it is highly seasoned with salt and pepper plus whatever else is in it. I use the powdered Louisiana Seafood brand that comes in the 4 lb. packet.

I'll boil them for a couple hours in my big pot making sure they are stirred fairly often to get the ones on top mixed in to cook uniformly. Then I'll shut it off and let them soak until they still have a bit of firmness to the bite----not hard, but now mushy either. Kind of like al dente pasta. Then I'll pull them to cool and put some away like that and my wife likes it when I put some in the oven to kind of dry out, but not as dry as a fully roasted peanut. I'll let them cook in the oven for about an hour at 250 and this dries them out about 3/4 of the way.

Add them to the pot and add water until the pot is half full. Add salt and stir until the water is at least as salty as the ocean. I do not use crab boil, but if you do, start with it instead of the salt, then when you get the water as zippy as you like, add salt if needed to get the water as salty as the ocean.

Add nuts to the pot and heat until it gets to a good boil, then reduce heat a little and cook with a lid at a low boil for at least 2 hours. Taste and if the nuts seem done, they are. Some folks soak in the boiling water for an hour or two as the water cools and some take the peanuts out as soon as they are done. Your choice.

I experimented with this and have gotten it down pretty good. My first few tries wee all way too salty. Now I put in 2-3 lbs of peanuts, 1/3 cup of salt, and 4-5 tablespoons of liquid crab boil. They come out great.

You gave no measurements whatsoever. How is that a recipe?

I used to use this as a guide. Haven't used it the past several years. Now I just wing it.

5 lbs of Green Peanuts.....
1 1/2 - 2 Cups of Crab Boil per 5 Lbs of Peanuts to taste. (Start with 1 Cup)
Water to cover well......

Boil/Simmer (covered) until peanuts are almost done....I like them slightly al dente. ~~Time will depend on size and maturity of peanuts....
When done to your liking...Turn off the heat and let the Spicy soak begin...Taste a few along to check for saltiness....The water will generally be cooled completely when the soak has worked its magic. ~~~ I have turned them off at 9 or 10 and let them soak all night.

ETA. Write down what you do...adjust for next time until you get your recipe down.

Screw that and screw the gas station peanuts that sit in the pots for days at a time.
All small and aren't worth a damn.

I gave perfect measurements.

Fill pot 2 inches above peanuts

Salty as the ocean is normally 3.5% salt. I can't remember when I saw anyone measure salt in a peanut boil. If he uses crab boil powder, I wouldn't begin to try to tell him how hot or spicy he likes it.

He knows how many peanuts he has.

Success!

I expected better than this from you Jack.
