I can't promise anything since you are cooking on a substandard machine.

Question regarding primo... If you split your box and have half of it as indirect, how big of a chunk of meat can you put on the indirect side?

I have put a spacthcocked chicken, some sausage, boudin and rolled ribs at the same time. It gets a little tight, but after Christmas I will have the ability to go up.

Yes, and drip pan racks.

For lunch, I'd hit up the Taco Sisters for their smoked tuna taco. It's easily one of the best fish tacos I've ever had.

ate at the new bar at Don's on Johnston for lunch. Chargrilled Oysters were excellent. Had to send my entre back because the fish was horrible. Overall, like what they did to the bar.

Describe "horrible" please.

Like chewing gum/tough. Sent it back for credit and order more chargrilled oysters.

Note to self: fish at Don's = chewing gum.

Stuffed Snapper. I had it about 3 times and every time it was great. Today not so much...

Downtown Don's is better than Johnston. Fish isn't tough.

Had the gumbo at Don's Downtown about a month ago, terrible. It was salty as hell and the pieces of chicken were monstrously huge for gumbo.

Another place I forgot to mention is LT's in Broussard.

I've never ordered that there. I been with others that have ordered that there, didn't look so good. Occasionally, I order a cup of their seafood gumbo before my meals. That would be the only gumbo I would go with there...
