Totally agree. You can ask 20 people from La. how they cook their gumbo and you'll likely get 20 different recipes with ingredients, how it's staged, how long it's cooked, etc.

I don't think I've ever eaten a bad gumbo, just some more tasty than others.

IMO, crabmeat adds more seafood flavor when you go half lump, half claw.

Also, get your hands on some crab base to add additional flavor as needed.

Add some gumbo crabs.
