I get shitty shrimp and crab up here, I'm not looking to keep their flavors intact . I put a very mild sausage in mind occasionally when I am craving seafood gumbo and it helps a lot. Is it traditional, hell no, but it's good.

When he was planning the opening of his restaurant on Chartres St. back in the late 70's, I was working for a company that made and installed commercial kitchen hoods, exhaust and fresh air systems and the fire suppression system that went with it.

That was my first sight of Paul and he was a huge man with a wife who was also a handful of woman. The Chef just got bigger and bigger as the years passed and it got to a point he used a scooter to get around due to his weight and health issues.

Truthfully, I'm surprised he lived to be 75 yrs. old carrying around all that weight for most of his life, although he did thin out a bit as he got old.

If you watch his shows on PBS you will see he's always sitting at the stove preparing his dishes.

I met him at a food festival in Laffy around 1990 or so. What a pleasure to talk to and a very nice guy. His PBS shows are gems.

I haven't checked, but would think u-tube would have a lot of his shows free for the viewing.

When he cooked, you could tell he was in his element and his love for food and feeding people by sharing many of the things he ate growing up was quite evident.

The Junior League sponsored the event and it was called the Culinary Classic. All the caterers and restaurants had booths set up at the Heymann Center. It was a big deal and he would go every year, and everyone would crane their necks and get whiplash when he would roll in.

Unfortunately the event is discontinued.
