Sautéed Mushroom Recipe From Last Night

Cremini mushrooms on sale so I did this last night. Was excellent.

1 lb Cremini mushrooms, sliced
3 T good unsalted butter, in all
2 T EVOO
3 sprigs fresh thyme
5 cloves garlic, chopped
4 T soy sauce
1/2 cup beef stock
3 T red wine
Fresh black pepper to taste
Salt to taste
2 T fresh parsley, minced

Method

Add 1 T butter and the EVOO to a hot skillet. Add the mushrooms and Worcestershire sauce and thyme. Shake the pan a little and cook out most of the liquid. Takes a couple of minutes.

Add the garlic, stock and wine. Add a few grinds of black pepper. Reduce the liquid until almost gone...should take 4 or 5 minutes. Taste for salt and add as needed.

When the liquid is almost gone, reduce heat to low, add remaining butter and fold it in. Remove the thyme. Cut the heat and add the parsley. Check seasoning and serve warm. Best I’ve had,

Imma try that. I love mushrooms.

When I was renting a house my landlord, ole Rodrique Baw from Chackbay, came over and asked if I wanted some stew. I said sure. It ended up being wild mushroom stew (oyster mushrooms) and it was probably one of the best stews I ever ate. I tried to replicate it but never have been able too.

Had was at my hunting buddy’s house. He had harvested a bunch of oyster mushrooms earlier that day. He cooked them in garlic and oil. They were damn good

Sautée mushrooms in salted butter
Add chicken stock
Add herbes de provence
Cook down until nearly dry.

Add two cups of rice.
Toast lightly.

Add two cups chicken stock and two cups of milk.

Stir constantly at a simmer until you have creamy tender rice.
