Use soft bread for soft fillings and hard bread for hard fillings.

Lettuce, tomatoes and cucumbers/pickle slices tend to slide, so put them next to the bread so they stay put.

Use a thin layer of butter or mayonnaise to provide a moisture barrier against meat juices to prevent making the bread soggy.

For a roast beef sandwich with gravy, thicken the gravy so it won't soak into the bread. On the other hand, if you want it to soak in, as with a French dip sandwich, the gravy or au jus needs to not be thickened.

Same thing with red sauce on a meatball sandwich - you want the sauce to be extra thick so it doesn't soak into the bread. And I usually cut the meat balls in half so they don't roll off the bread.

I do this with mustard instead.

When making a grilled cheese sprinkle some of the cheese in the skillet, when it crisps up, the bread is perfectly golden brown. Add more cheese and repeat for other side.

Dan Pashman (the Sporkful podcast guy) has been all over this.

Solve the Sliced Cucumber Conundrum with the Silver Lining of Greens. Sliced cucumbers, tomatoes, and avocados are wonderful sandwich ingredients, but they’re especially liable to slip out the back. This is called the Sliced Cucumber Conundrum.

The solution for any slippery sandwich interior is a technique called the Silver Lining of Greens. Place greens strategically throughout instead of concentrating them at the top, in order to provide friction between layers as well as protection for the bread.

Respectfully disagree with this one. One of my favorite sandwiches is chicken, egg,or tuna salad on toasted bread or a crunchy baguette type roll. The contrast of texture is what makes it work for me.
