This is the first I've heard of said practice.. If I have saltines with gumbo, which for me is not a requirement, I have em on the side with butter.

Sometimes I won't eat rice with it and just use more french bread, but usually only when its leftovers.

I always use Saltines. Probably only 7 or 8 with a good size bowl though.

And with chili...I've added crushed (finely crushed) cheese Doritos to the pot at the end of cooking. It makes a pretty good thickener. I'll also crunch up a few (not so fine) and add to my bowl. I'll do saltines in chili too (bowl, not the pot).

easy. i have gumbo in the fridge, too lazy to make rice. don't really miss it....which is odd b/c i LOVE rice and gravy.

If it is really dark and well-made gumbo (like KPaul's) I prefer it without rice as well.

I wouldn't consider rice essential to gumbo. It's a filler and doesn't really add anything to the dish besides that, IMO.

depends on how thick it is.....or how hungry i am......when the gumbo was cooked.....what kind........what mood im in........

i dont always do with out rice.....but like lettuce on a burger, its a filler without taste!

I use at least 1 sleeve of saltines in 2 bowls of gumbo, and never eat chili without crushing Lance peanut butter crackers in it.
