Rouses has short ribs/dino ribs on sale

I cook a lot and consider myself to be pretty good at it. I’ve never cooked these but want to try. Give me some ideas please

Dino ribs - smoke them
Short ribs - braise them and serve over rice or grits. I think I've made some really good birria tacos with them one time as well.

I use to get dino ribs and smoke them not long ago before covid for $3.50 a lb

I have no idea what they normally sale for because I’ve never bought them. But what piece of meat has not gone up since Covid?
