Roast beef poboy recipe needed

There was a recipe online for a roast beef poboy that I cannot find anymore….
Was looking for some tried and true methods. The one that was my go to, I would cook, make a gravy, slice and set in fridge overnight. Any chance someone has something similar they can share?

Might get bashed but this works. You can adjust the seasoning as you'd prefer. I stuff with garlic first and don't use the tomato paste. I put a small amount of water in it but it stays moist and makes its own jus during the process. Once I pull it apart in the pot the liquid seems to resorb onto the meat and all the meat seems gravy coated. Also, it doesn't take 8 hours. I get it done in 5 or so.

It’s a 2 day process since the roast beef is cooked for 12+ hours, cooked, chilled, sliced cold, then reheated

I just cook a roast in the crock pot and it falls apart. Put on French bread or toast with provolone or Swiss cheese and whatever else you want.

Get magnolite pot
Season 3-4 pound chuck roast with salt n black pepper
Add cooking oil and sear all sides of roast
Add mix of beef stock, chicken stock, water and 2 bay leaves
Cover pot and bake in oven for 5-6 hours (check every hour to make sure it has fluid)
After 2-3 hours add trinity and can put other packets of stuff (French onion soup) to add with gravy to make au jus
After cooked break up meat with a fork, or let cool then slice thin (up to you on texture you like)
Toast French bread lightly, mayo, thin sliced cabbage, roast beef then au jus
