I definitely do not understand the gravy/red sauce thing. I always seem to get the terminology wrong.

I think it's the Italian-American idea of gravy, specifically the east coast. Italians would call it sauce.

As far as I know, a gravy is just a sauce that has meat or meat juices in it. Sicilians in NOLA always have meat in their tomato sauce and that is why they call it gravy.
