So much going on in this thread, but any one who said the Alton Brown method is correct. Made them several times, money every time. I lower the heat to 225, up the cook time, adjust the rub to my preference. A smoked rack, of course not, but the method is solid.

You bring up a fair point. The Foob Board should be helpful. The tone of the OT Board spills over into other boards far too often.

WTF kind of rig does not have a welding machine, welder, and the required iron for a pit.
I have never seen a rig without one, offshore or on.
Back to the op's question, season as normal, 225 in oven, don't wrap, cook until your desired internal temps for firmness, eat and enjoy.

Nothing wrong with ribs in the oven. I made em last week- just use Dave's rub PLUS smoked paprika and they came out fine. Finished them off with classic KC Masterpiece
